For more than one hundred years the name of the Medici family has been synonym with excellent Lambrusco and quality wine. At the beginning of the 20th Century Remigio, the founder, set up a wine cellar? for the production of Lambrusco with the purpose to exploit in the best possible way the family's vineyards, situated between the Via Emilia and the first slopes of the Enza valley. His son, Ermete, was then responsible for marketing and expanding this brand. Today, the fourth generation of the Medici family still shows the same passion and skill every day in the vineyard? as well as in the cellars that have made them protagonists in the world of wine. Naturally they put the same effort and passion into the production of their high quality balsamic vinegar??.
True balsamic vinegar?? of Modena comes from the northern part of Italy, from the region? of Emilia-Romagna situated between Lombardy and Tuscany. It is made from unfermented grape juice? with a high sugar? content. When the juice begins to ferment?, it is cooked in a copper kettle until about one-third of it has evaporated. Bacteria culture is usually obtained by adding vinegar which contains active bacteria. Finally, the balsamic vinegar is moved across various wooden barrels (from oak?, chestnut, walnut, cherry, mulberry, etc.) to age. Here, it will evaporate by about 10% per year. Thus, 12 years later a 100-litre container has been reduced to 15 litres. True balsamic is very dark in colour, has a sweet, fruity? flavour and a syrupy-type consistency. Surprisingly, true balsamic vinegar is usually not found in supermarkets. There, one will generally find commercial grade balsamic vinegar that is made up of red wine vinegar flavoured with various “balsamic� aromatic? compounds. It can be estimated that probably over 75% of commercial grade balsamic vinegar is pure red wine vinegar with no must?. You will notice that the commercial grade is much lighter in colour and has a strong acidity? taste? and smell to it.

This product has been aged for eight years in barrels of different precious woods.
