Antinori purchased the Castello? della Sala estate? in 1940. The first vintage? of Castello della Sala Orvieto Classico? Was in 1990. The wine became an Orvieto DOC? Classico Superiore? with the 1997 vintage (the new "Superiore" denomination was first applied in 1997). The "Superiore" denomination stipulates that the crop yields per hectare? must? be much lower than those of the normal Orvieto Classico.

The grapes are picked only when fully ripe and the wine released after March 1st in the year following the harvest. The Castello? della Sala estate? is about 18 Kms from Orvieto. The Castello is a good example of medieval military architecture and its vineyards thrive in an ideal microclimate? for the production of wines that require a relatively cool climate, such as white wines.
The crop yield? per hectare? from the vineyards that produce this wine is especially low (about 7 tons). The grapes had a slightly higher than average level of sugar? ripeness? when harvested. They were immediately transported to the cellar?, where the various varieties that make up the wine were vinified separately. In order to achieve a good level of extraction and to enhance the aromas, a part of the crop was vinified using the cold press method (the must? was left on the skins for about 6 hours at 10° C). The resulting must was added to the must obtained by direct pressing and was racket off into stainless steel vats, where alcoholic fermentation?? took place at controlled temperature (not exceeding 16° C).
The wine remained in stainless steel vats until ready for blending and bottling.
Pale yellow colour with floral? aromas and warm, ripe fruity? character. Tasty with mineral? overtones, yet soft?, with a long, rich finish?.
Porcini? mushrooms? risotto?, codfish with olives? and capers?, grilled and stewed fish, stuffed pasta, roasted white meats.
Drink this wine now or cellar? for up to five years.
