Calissano, who for more than a century has selected and enhanced the best Piedmontese wines, presents an up-dated version of the most classic and prestigious amongst the 5 Barbera DOCs (Asti, Monferrato, Alba, Colli Tortonesi and Piemonte), that of Asti.

100% Barbera

The vineyards can be found in the best-sited hills of Asti. The vines are trained by the Guyot system in well-exposed ground, poor in structure, and made up of tufaceous clay and marl.

The ripe grapes, picked by hand, are vinified by the red wine method with a long maceration at a controlled temperature and with selected yeasts. The alcoholic fermentation is immediately followed by the malolactic fermentation, which makes the wine taste softer. Matures for six months in medium-toasted barrels of french oak and of white oak from Minnesota. The wine rests in the bottle before it is released for sale.

Intense ruby colour, with garnet hues; very distinctive bouquet with notes of vanilla and balsam which highlight hints of jam and carnations with undertones of toasted hazelnuts; dry, full, warm flavour, soft but well structured with a lingering elegant, fruity, spicy aftertaste.

12.8% alcohol, 6.2 g/l total acidity, 3.40 pH, 0.8 g/l sugar, 26 g/l dry extract.

Poultry, game and boiled, braised and roast meats, mature cheeses.
