Selected vineyards in the DOC area, on morainal-glacial hills with gravel-mixed clay and lime. The wines are trained on a double trellis system.

Grapes harvested between end of September and mid-October. Part of the grapes are processed off-skins, while the rest undergo cold skin contact for 8-10 hours. After static settling, the must is inoculated with selected yeast and fermented at 16-18°C. The different batches are blended together and the wine is allowed to rest in stainless steel tanks.

Brilliant pale yellow in colour, it has a distinctive bouquet; the flavour is dry and soft but elegant and lively. Overtones of bitter almond and hints of field flowers and moss. Lingering aftertaste of ripe yellow plum.

11.5% alcohol, 6,20 g/l total acidity, 3,30 pH, 2 g/l sugar, 19,5 g/l extract.

Serve with hors d’oeuvres, first courses and fish.

Serving temperature: 10-12°C.
