The Riserva is produced only in very good vintages, from a selection of the best grapes purchased by the winery in the Rufina area.

Classical red vinification with a period of maceration (skin contact) of about 3–4 weeks, depending on the vintage. The wine completes its malolactic fermentation in the weeks following the racking. It is then kept in french oak barrels for a period of 14 months. Before its release, it matures in bottles for at least six months.

Deep ruby/garnet red colour. Concentrated nose showing plum and berry character. On the palate full and round, with soft tannins and a long fruity, peppery finish.

13% alcohol vol, extract 28 g/l, total acidity 5,6 g/l, total SO2 60 mg/l.

Serve with wild game, red meats (especially braised, stewed or grilled) or aged cheeses.

This wine is released after about 30 months of aging. Depth and complexity will increase with further aging.
