Sangiovese Toscano 100%

It is obtained by 100% Sangiovese grapes coming from Fattoria di Basciano, by setting some of the must apart during the very first hours of fermentation, as soon as it has acquired a pinky colouring.

This technique, called "salasso" (or must bleeding) is known to produce high quality "rosé" wines as well as red wines with complex structure and good concentration. Consequently, this "rosato" is a fresh, fruity wine with marked floral scents against a backdrop of unusual concentration and lively texture.

Some of the must is set apart from the skins right after a few hours of maceration (as soon as the cap comes up). Then, it is cold settled for about 24 hours, at a temperature of 5°C. Fermentation follows at a controlled temperature of 18°-20°C. It undergoes partial malolactic fermentation.

Salmon-pink colour. Intense and rich nose, with distinctive fruity and flowery overtones. On the palate, it is medium-bodied, with lively acidity and good softness, further highlighted by a touch of residual sugar.

12,5% alcohol vol.

It marries very well with first courses with simple sauces, with cheeses and cold meats, and also with fish, especially grilled.

It is recommended that the wine is consumed within one year of purchase.
