The long history of Santi started in Val d'Illasi in 1843. The deep connection of the business with the area, the expertise of the oenologists and the unrelenting drive for "unique" quality has produced consistent success with wines such as the Soave Sanfederici and Amarone Proemio.

Selected parcels in the most acclaimed areas, on medium and high hills, in the districts of San Pietro in Cariano, Marano and Fumane; the vines, mainly from old plantings (over 30 years old) are trained with the pergola and Guyot systems. The ground is rich in limestone and is notable for a perfect exposure facing the southwest.

From the end of September the most scattered, the ripest and the healthiest bunches with the best exposure to the sun (10% of the total grapes) are picked by hand and then placed in 5kg wooden boxes, in traditional fruit sheds to overripe and finally to dry. The natural dehydration enriches the grapes with concentrated sugar and polyphenolic and aromatic compounds. In February, after the pressing, comes the fermentation which lasts for about 5 weeks. Temperature control and careful management of pumping-over procedures are implemented in such a way as to optimize the maceration process; this is the only way of ensuring that the grapes’ best characteristics are retained and enhanced.

After the fermentation the wine matures for about 2 years in wooden casks of different ages, origins, sizes and toasts, with frequent skilful adjustments. Before being released, the wine rests in bottle for about a year for further ageing.

Deep ruby red colour with a very light garnet rim; intense, very complex bouquet with strong notes of raisins, cherries and dried plums and hints of vanilla, violets and cinnamon; full, generous and very firm flavour with an elegant lingering aftertaste of preserve and spices. It is a very fine Amarone, of superb balance and infinite elegance which, thanks to its structure and its extracts, will be able to improve over the years.

15.95% alcohol: 6.80g/l total acidity; 3.38pH; 8.5g/l residual sugar; 35.5g/l dry extract.

Serve with red meats, game and strong cheeses.

Serving temperature: 18-20°C.

8-10 years in bottles stored horizontally in cool, dark conditions.
