Viña San Pedro has been crafting wines in Chile for nearly one-hundred and fifty years. Once a pioneer, today a New World innovator, along the years San Pedro has helped build an industry stretching from the Elqui Valley to the Bío Bío Valley.

Castillo de Molina was San Pedro's first Reserve range of wines and has become a renowned Chilean reserve wine the world over. Its current direction is to identify the best Chilean terroirs for each variety, and thus obtain the highest individual expression for every single one. Castillo today offers eleven varieties, stemming from the most diverse viticultural regions in Chile, including Carménère from Maule, Cabernet Sauvignon from Alto Cachapoal and a smashing Sauvignon Blanc from the Elqui Valley. Castillo wines are well known and acknowledged by critics and consumers alike, awarded with numerous prizes, medals and scores in specialized publications and wine blogs.

90% Carménère
10% Cabernet Sauvignon

This wine was made with Carménère grapes from the Viña San Pedro vineyards in the Maule Valley. The vineyards are planted on gentle hillsides with moderately deep sandy-clay-loam to clay soils with medium size stones on the surface. The vines are vertically trellised and drip irrigated.

2007 was an atypical year. Temperatures were lower than normal, and the red varieties were generally harvested at least 10 days later than in a normal year. The average alcohol levels were 1° lower than normal, and the acidity higher, which aided in both color and freshness.

The grapes were hand picked during the second week of May. Vineyard yields were 9.5 tons/hectare.

Following a 3-day cold soak, alcoholic fermentation took place with selected yeasts at controlled temperatures of 25°–27°C, with 6 short pumpovers per day. Total maceration was 20 to 25 days.

100% of the final blend was aged for 1 year in French oak barrels, 30% new.

Color: Deep and intense violet.
Aroma: Primarily of black fruits, blackberries, fresh plums, and spices that interact perfectly with subtle notes of toast, vanilla, and toffee.
Palate: Medium concentration with good volume and structure, ripe fruit, silky texture. Well-integrated and fresh.

13.9% alcohol per volume; 3.77 pH; 5.0 g/l total acidity; 0.54 g/l volatile acidity; 2.6 g/l sugar.

Ideal with risotto, roasted lean meats, game birds, and ripe cheeses.

Serving temperature: 16–17°C.
